Pilot Research on Improving Consumer Health Literacy in Food Labels by Measuring the Prevalence Occurrence of Similar Ingredients

Abstract

Food labels on packaged foods should be consistent, correct, and helpful. However, they contain irregularities, including misspellings and different terms used to characterize the same ingredient. We created distribution graphs of ingredients with the highest occurrences from two databases, USDA FoodData Central and Open Food Facts, and prevalence scripts to compare the proportion of ingredients with their synonyms. Consumers with food allergies, intolerances, or mindful of their health will be informed of these alternative terms and less at risk for health problems. This will also bring awareness to the inconsistencies of food labels, thus improving the health literacy of consumers.
